This is the proposed menu for the Gallery Dinner on 8/17/08.  

Gallery 8/17

Zucchini

Shrimp, Lemon Vinaigrette, Crème Fraiche`, Squash Blossom

Gnocchi

Golden Tomato-Saffron Sauce, House Cured Guanciale, Parmesan

Scallop

Jacob’s Cattle Beans, Duck Lardo, Chorizo Broth

Lamb

Eggplant Puree`, Puttanesca Persille`, Black Olive Sauce, Baked Goat Cheese

Brown Butter Coconut Cake

Rum Glaze, Salt-Baked Pineapple, White Chocolate Sorbet

  1. Perfect. Sort of starts light and moves through to the stronger tastes. The lamb sounds particularly fantastic, a black olive sauce. And dessert. Thanks, Wil, that is a wonderful one. How I wish I was there.

    okay, the scallops too, how can i resist? oh and if Pauls having the lamb, well I suppose I’ll have some too. i do love lamb. : ) fantastic menu. this heart is salivating. and staring back into the kitchen at her greasy Costco pizza and feeling some buyers remorse. lol.
