A Little Cheeky
Got some beef cheeks in for an end of summer Prix Fix menu. Even though the menu has to have a low food cost doesn’t mean that it can’t taste good. And as it stands right now it’s the closest thing that I’ll get to a tasting menu. I took the idea and ran with it. Here is a pic of the beef cheeks we got in today. A little polenta, some beech mushrooms, cipollini onions, and pickled figs.

I’ve never tried cheeks. That sauce looks rich and lovely. I’ll have to keep an eye for cheeks from now on. Beautifully looking food making me so hungry as usual, Wil. Fantastic.

are the cheeks more tender? i know whenever we go halibut fishing, the cheeks are the thing we desperately attend to. halibut cheeks are beyond heavenly life. is it this way for beef? i wonder because you mentioned budget.
