Potato/Fennel Puree, black olive sauce. fennel oil, and whipped Orange. I used Transglutaminase, and glued Salami to the fish. I also used Versa Whip 600k to make the whipped orange. Hopefully many more to come.

You torture me with this food. I am getting a passport tomorrow just to get there and eat this. Have you ever seen “Iron Chefs” the Japanese cooking show? This one reminded me of that. Check it out if you haven’t seen it. You’ll love it.
