Sweet Dumpling Squash Souffle Test #1.  We have reps coming from Jagermeister  into the restaurant on Wednesday  and they asked if I could make a special dessert for them using Jagermeister.  I made a sauce by reducing down the liquor and spiced it with Cinnamon, Clove, Cardamom, AllSpice, and Star Anise.  When I tasted it, it reminded me of Pumpkin Pie so I made a Squash Souffle`.  I’m going to Roast Baby Sugar Pumpkins with 5 spice, and then make a Jam with that pumpkin.  That will line the bottom of the dish, and Turbinado Sugar will line the walls.  When baked and served, the guest will crack the top of the souffle` and pour in the Jagermeister Syrup.  I think it was a great success, but the guest is always the judge of that.  Enjoy.
