My Heirlooms In Three Different Forms

This is the process from picking them in my back yard to making it to the table.  Tomato Tar-Tar, Tomato Water, and Tomato Sorbet.  Whipped Artisan Ricotta, Basil Oil, and Alphonso Olive Sea Salt.  I fortified the sorbet with Portuguese Single Varietal Olive Oil, and Two Year Old Saba Vinegar.  The Pacojet is an amazing tool.  Everything come out of the machine at the precise temperature to serve, and it only takes 20 seconds to make 3.5 ounces of sorbet.  Technology Rocks!!!!
